Ingredients
- 1 whole chicken (cut into quarters)
- 1/2 cup grated ginger (juice extracted)
- 1/4 cup finely chopped spring onion (white parts only)
- 1 cup oil
- 1/2 teaspoon salt
Instructions
- In a large pot, bring enough water to cover the chicken to a boil over medium-high heat.
- Add the chicken pieces and boil for 5 minutes. Turn off heat, cover, and let poach for 40 minutes.
- To prepare the sauce, mix grated ginger, chopped spring onion, and salt in a bowl.
- Heat oil in a small pot until hot but not smoking. Turn off heat and stir in ginger scallion mixture until it sizzles.
- Cut poached chicken into pieces and serve drizzled with ginger scallion sauce.
