Instructions
- Grate or finely chop the ripe tomatoes. Drain excess juice if necessary.
- In a mixing bowl, combine flour, baking powder, salt, and black pepper.
- Add the tomatoes, crumbled feta cheese, parsley, and dill to the dry mix; stir until well combined.
- Incorporate eggs into the mixture until thick but manageable.
- Heat olive oil in a frying pan over medium heat.
- Shape small portions of batter into patties and carefully place in hot oil.
- Fry each side for about 3-4 minutes until golden brown.
- Drain on paper towels and serve warm.
