Instructions
- Soak the pitted Medjool dates in boiling water for 5-10 minutes until softened.
- In a small blender or food processor, blend the soaked dates (drained), cottage cheese, and vanilla protein powder until smooth.
- Transfer the mixture to a mixing bowl and gently fold in unsalted peanuts and dark chocolate chips.
- Spoon the mixture into jars or bowls and refrigerate for at least 1 hour before serving.
