  • 1 pound lean ground turkey
  • 2 cloves garlic, finely chopped
  • 1 cup diced canned tomatoes
  • 1 medium zucchini, grated
  • A large handful of spinach, chopped
  • 1 tablespoon olive oil
  • 1/3 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • Optional: 1 cup black beans, rinsed and drained
  • Optional: 1 cup corn kernels

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and poke holes in them using a fork. Rub with olive oil and sprinkle with salt. Roast on a baking sheet for about 45 minutes or until tender.
  3. While roasting, heat olive oil in a skillet over medium heat. Sauté garlic until fragrant; add ground turkey and cook until browned.
  4. Stir in spices, diced tomatoes, zucchini, spinach, and season to taste. Cook until heated through.
  5. Carefully cut each roasted sweet potato lengthwise and fluff the insides. Generously stuff each potato with the turkey filling.
