Ingredients
- 4 medium-sized sweet potatoes
- 1 pound lean ground turkey
- 2 cloves garlic, finely chopped
- 1 cup diced canned tomatoes
- 1 medium zucchini, grated
- A large handful of spinach, chopped
- 1 tablespoon olive oil
- 1/3 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- Salt to taste
- Pepper to taste
- Optional: 1 cup black beans, rinsed and drained
- Optional: 1 cup corn kernels
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and poke holes in them using a fork. Rub with olive oil and sprinkle with salt. Roast on a baking sheet for about 45 minutes or until tender.
- While roasting, heat olive oil in a skillet over medium heat. Sauté garlic until fragrant; add ground turkey and cook until browned.
- Stir in spices, diced tomatoes, zucchini, spinach, and season to taste. Cook until heated through.
- Carefully cut each roasted sweet potato lengthwise and fluff the insides. Generously stuff each potato with the turkey filling.
