- 10 oz fresh blueberries
- 1 cup plain flour
- 1/2 cup vanilla-flavored protein powder
- 3/4 cup thick Greek yogurt
- 1/2 cup extra-virgin olive oil
- 2 tbsp honey
- 1 large egg
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin with olive oil or line it with paper liners.
- In a mixing bowl, whisk together plain flour, protein powder, baking powder, and baking soda until well combined.
- In another bowl, mix thick Greek yogurt, olive oil, honey, egg, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and gently stir until just combined.
- Fold in fresh blueberries carefully without breaking them.
- Spoon the batter into muffin cups about two-thirds full and bake for approximately 25 minutes or until golden brown.
- Allow to cool slightly in the pan before transferring to a wire rack.
