- 1 cup chopped fruit
- 1 cup green grapes
- 1 cup strawberries (diced)
- 1 cup peaches (chopped)
- 1 cup blueberries
- ¼ cup chopped vegetables
- ¼ cup spinach
- ¼ cup beets
- ¼ cup carrots
- ¼ cup zucchini
- ¼ to ½ cup pure apple juice
- 2 tablespoons raw honey
- ¼ teaspoon pure vanilla extract
- 3 tablespoons plant-based gelling agent (like agar-agar)
Instructions
- Prepare silicone molds on a baking sheet or line an 8×8 dish with wax paper.
- Blend chopped fruit, vegetables, and apple juice until smooth. Add more juice if needed.
- Mix in honey and vanilla until combined.
- In a saucepan over medium heat, whisk in the gelling agent until dissolved (do not boil).
- Pour the mixture into molds or dish, then refrigerate for at least 2 hours to set.
- Remove from molds or cut into squares to enjoy!
