Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a bowl, whisk together honey, lime juice, lime zest, and minced garlic.
- Heat oil in a large frying pan over medium-high heat; cook chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F.
- Brush honey-lime glaze on chicken during the last two minutes of cooking; let rest before slicing.
- Mix cooked rice with chopped coriander and lime juice in a bowl; season with salt.
- Toss avocado slices with lime juice, salt, and pepper to enhance flavor.
- Assemble by layering rice, avocado slices, and chicken in a ring mold on a plate; drizzle remaining glaze around the stack.
