Ingredients
- 2 1/4 cups mashed overripe bananas
- 2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp baking soda
- 1/2 tsp nutmeg
- 1/2 cup butter
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 2 eggs, beaten
- 1 tsp vanilla extract
- 1 tsp cinnamon
Instructions
- Mash the bananas until you have about 2 1/4 cups.
- In a large bowl, combine flour, salt, baking soda, and nutmeg.
- In another bowl, cream together butter, brown sugar, and white sugar. Mix in cinnamon, eggs, vanilla extract, and mashed bananas until well blended.
- Gently combine the wet mixture with the dry ingredients until just mixed.
- Pour the batter into a greased pan. Place a trivet in the Instant Pot with one cup of water underneath.
- Cover the pan with foil and create handles for easy removal.
- Seal the lid on the Instant Pot and cook on manual for 50 minutes; perform a quick release afterward.
- Carefully remove the pan using foil handles and cool on a rack before slicing.
