  • 1 lb chicken breast or thighs (thinly sliced)
  • 1 cup flour (for coating)
  • Salt and pepper (to taste)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar (or honey)
  • 1 tbsp grated ginger
  • 2 cloves garlic (minced)
  • 1 tbsp cornstarch (dissolved in 2 tbsp water)
  • 2 cups cooked rice (white or brown)
  • Sesame seeds (optional garnish)
  • Green onions (optional garnish)

Instructions

  1. Season the chicken with salt and pepper, then coat it in flour.
  2. Heat oil in a skillet over medium-high heat and cook the chicken until golden brown, about 3-4 minutes per side. Remove from skillet.
  3. In the same skillet, sauté ginger and garlic until fragrant. Add pineapple juice, soy sauce, and brown sugar; bring to a simmer.
  4. Stir in pineapple chunks, then whisk in cornstarch mixed with water to thicken the sauce.
  5. Return chicken to the skillet, coating it well with the sauce; simmer for another 2 minutes.
  6. Serve over warm cooked rice.
