- 15 organic lemons
- 2 bottles (750 ml each) lemon juice
- 4 cups sugar
- 5 cups filtered water
Instructions
- Wash and zest the lemons, avoiding the bitter white pith.
- In a large glass jar, combine lemon zest and lemon juice. Seal tightly and let sit in a cool, dark place for two weeks, shaking gently every few days.
- After two weeks, prepare a sugar syrup by dissolving sugar in water over medium heat. Allow to cool before mixing with the lemon infusion.
- Strain the mixture through a fine mesh strainer or cheesecloth into clean bottles, removing all solids.
- Seal the bottles tightly and refrigerate for at least one week before serving chilled.
