  • 12 oz fresh raspberries
  • 2 large fresh mangoes (cubed)
  • 1 lb fresh strawberries (cubed)
  • 1 lb green grapes (halved)
  • 1 lb red grapes (halved)
  • 4 cups apple juice
  • 4 pockets original unflavored vegan gelatin
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Thoroughly wash and prep all fresh fruits. Lightly spray a bundt pan with pan spray and wipe off excess.
  2. In a medium bowl, combine 1 cup of apple juice with vegan gelatin; set aside. In a small saucepan, bring the remaining apple juice, sugar, and lemon juice to a boil. Pour this mixture over the gelatin and whisk until fully dissolved. Allow to cool.
  3. Layer the prepared fruits in the bundt pan in order: raspberries, mangoes, strawberries, green grapes, and red grapes.
  4. Pour the cooled gelatin mixture over the layered fruits until completely covered. Refrigerate for 3-4 hours until set.
  5. To serve, briefly immerse the bundt pan in hot water to release the cake, then invert onto a serving plate.
