- 2 cups all-purpose flour

- 1 tablespoon lemon zest
- 2/3 cup lemon juice (about 4-5 lemons total for juice)
- 4 large eggs
- 2 cups sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, and salt. Cut in softened butter until crumbly.
- Press mixture into the bottom of a greased 9×13-inch pan and bake for 15 minutes until lightly golden.
- In another bowl, whisk together eggs, granulated sugar, lemon juice, and zest until combined.
- Pour lemon mixture over the crust and bake for an additional 25-30 minutes until set.
- Cool completely on a wire rack. Dust with powdered sugar before slicing into squares.
