- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1/4 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1 cup cherry pie filling
- 1/4 cup chopped pistachios
Instructions
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs with sugar and melted butter. Press into the bottom of the pan. Bake for 8 minutes; let cool.
- In a large bowl, beat softened cream cheese until smooth. Gradually add sugar until fluffy.
- Mix in sour cream, then add eggs one at a time, followed by lemon zest, lime zest, lemon juice, and lime juice. Blend until smooth.
- Pour filling over cooled crust and bake for 50–60 minutes until set in the center. Cool in the oven with door ajar for an hour.
- Refrigerate for at least 4 hours or overnight before topping with cherry pie filling and pistachios.
