- Optional: ½ teaspoon lemon zest
- ½ cup fresh blueberries
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate egg yolks and whites into two bowls.
- Blend cottage cheese until smooth, then mix it with egg yolks, cornstarch, and optional ingredients in one bowl.
- In another bowl, beat egg whites with cream of tartar until stiff peaks form.
- Gently fold the whipped egg whites into the cottage cheese mixture without deflating them.
- Carefully incorporate the blueberries into the batter.
- Spoon mounds of batter onto the prepared baking sheet.
- Bake for 25-30 minutes until golden brown and firm to touch.
- Allow to cool before serving.
