  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (3-4 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup walnuts or pecans, chopped

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. Using an electric mixer, beat softened butter and brown sugar until fluffy (about 3-4 minutes). Add maple syrup and mix for another minute.
  4. Incorporate eggs one at a time, mixing well after each addition. Blend in mashed bananas and vanilla extract until fully combined.
  5. Gradually add half of the dry mixture on low speed until just combined. Mix in yogurt, then incorporate the remaining dry ingredients without overmixing. Fold in most of the chopped nuts.
  6. Pour batter into the prepared loaf pan, topping with reserved nuts. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Drizzle warm maple syrup over the top after baking for an extra touch of sweetness.
  8. Allow to cool completely before slicing.
