  • 2 cloves garlic, minced
  • 1 (13.5 oz) can coconut milk
  • 2 tbsp curry powder
  • 1 cup chicken broth
  • 2 tbsp brown sugar
  • 1 tbsp soy sauce
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, seasoning, egg, onion, garlic, salt, and pepper. Mix well.
  2. Roll mixture into 1-inch meatballs and place on a baking sheet.
  3. Heat oil in a skillet over medium heat. Cook meatballs until browned on all sides (2–3 minutes each).
  4. In the same skillet, add coconut milk, curry powder, chicken broth, brown sugar, and soy sauce; stir to combine.
  5. Bring sauce to a simmer and cook for 10–15 minutes until thickened.
  6. Add meatballs back to the skillet; simmer for an additional 5 minutes until fully cooked.
  7. Garnish with fresh chopped cilantro before serving.
