Ingredients
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 2 tbsp seasoning
- 1 egg
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 (13.5 oz) can coconut milk
- 2 tbsp curry powder
- 1 cup chicken broth
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1/4 cup chopped fresh cilantro
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, seasoning, egg, onion, garlic, salt, and pepper. Mix well.
- Roll mixture into 1-inch meatballs and place on a baking sheet.
- Heat oil in a skillet over medium heat. Cook meatballs until browned on all sides (2–3 minutes each).
- In the same skillet, add coconut milk, curry powder, chicken broth, brown sugar, and soy sauce; stir to combine.
- Bring sauce to a simmer and cook for 10–15 minutes until thickened.
- Add meatballs back to the skillet; simmer for an additional 5 minutes until fully cooked.
- Garnish with fresh chopped cilantro before serving.
