  • 4 Oreos (chopped plus more for topping)
  • 4 tbsp unsalted butter
  • 1/3 cup semi-sweet chocolate chips
  • 1/4 cup + 1/8 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp fine sea salt

Instructions

  1. Preheat your oven to 350 F (180 C) and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, cream together the butter, light brown sugar, and granulated sugar until smooth. Mix in the egg yolk and vanilla extract, then fold in flour, salt, baking soda, and chopped Oreos until combined.
  3. In another bowl, melt the butter and chocolate chips together until smooth. Whisk together sugar, egg, and vanilla extract in a separate bowl until fluffy. Gradually add the melted chocolate mixture. Fold in flour, cocoa powder, and salt until fully mixed.
  4. In the prepared pan, scoop cookie dough and brownie batter alternately. Press down on cookie dough balls to match brownie height and top with extra Oreos. Bake for 25–27 minutes or until golden brown; use a toothpick to check for moist crumbs.
