This comforting one-pan baked chicken and rice is rich, flavorful, and incredibly satisfying. Juicy seasoned chicken drumsticks bake over perfectly tender, buttery rice infused with garlic and herbs, making it an easy and nourishing meal with minimal cleanup.

For the Chicken:
4 chicken drumsticks (bone-in, skin on or removed if preferred)

For the Rice Mixture:
1 onion, chopped
2 garlic cloves, minced
2 tablespoons butter, cut into pieces
1 1/2 cups uncooked rice
1 1/2 cups chicken stock
1 1/4 cups water

For the Seasonings:
Oil spray
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3/4 teaspoon salt
Black pepper, to taste
Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the oven to 350°F (175°C). Lightly grease a baking dish with oil spray.
  • Spread the chopped onion and minced garlic evenly in the bottom of the baking dish.
  • Add the uncooked rice and spread it evenly over the onion mixture.
  • Pour in the chicken stock and water, then gently stir to combine.
  • Place the butter pieces evenly over the rice mixture.
  • In a small bowl, mix the paprika, thyme, garlic powder, onion powder, salt, and black pepper.
  • Rub the seasoning mixture evenly over the chicken drumsticks.
  • Place the seasoned chicken on top of the rice mixture.
  • Cover the dish tightly with foil and bake for 35 minutes.
  • Remove the foil and continue baking for another 20–25 minutes, or until the chicken is golden and fully cooked and the rice is tender.
  • Let the dish rest for 5 minutes before serving.
  • Garnish with fresh parsley and serve warm.
