Ingredients
For the Chicken:
4 chicken drumsticks (bone-in, skin on or removed if preferred)
For the Rice Mixture:
1 onion, chopped
2 garlic cloves, minced
2 tablespoons butter, cut into pieces
1 1/2 cups uncooked rice
1 1/2 cups chicken stock
1 1/4 cups water
For the Seasonings:
Oil spray
1 teaspoon paprika
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3/4 teaspoon salt
Black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Lightly grease a baking dish with oil spray.
- Spread the chopped onion and minced garlic evenly in the bottom of the baking dish.
- Add the uncooked rice and spread it evenly over the onion mixture.
- Pour in the chicken stock and water, then gently stir to combine.
- Place the butter pieces evenly over the rice mixture.
- In a small bowl, mix the paprika, thyme, garlic powder, onion powder, salt, and black pepper.
- Rub the seasoning mixture evenly over the chicken drumsticks.
- Place the seasoned chicken on top of the rice mixture.
- Cover the dish tightly with foil and bake for 35 minutes.
- Remove the foil and continue baking for another 20–25 minutes, or until the chicken is golden and fully cooked and the rice is tender.
- Let the dish rest for 5 minutes before serving.
- Garnish with fresh parsley and serve warm.
