- 1/2 cup creamy peanut butter
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 1/2 cups mashed banana (about 3 to 4 medium overripe bananas)
- Optional: 1/2 to 2/3 cups chopped nuts (e.g., pecans, walnuts)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
- In a bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt; set aside.
- Using an electric mixer, beat the softened butter with brown sugar and peanut butter until fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients into the wet mixture in three portions, alternating with the sour cream until just combined.
- Gently fold in the mashed bananas and optional chopped nuts.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes or until golden brown. A toothpick inserted into the center should come out clean.
- Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
