Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. Using an electric mixer, beat the softened butter with brown sugar and peanut butter until fluffy. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Gradually add the dry ingredients into the wet mixture in three portions, alternating with the sour cream until just combined.
  5. Gently fold in the mashed bananas and optional chopped nuts.
