Ingredients
- 1 medium pineapple
- 1 ½ lbs boneless skinless chicken breasts
- ½ tsp Salt
- ¼ tsp ground black pepper
- 1 Tbsp cooking oil
- 1 cup pineapple chunks
- ¼ cup soy sauce
- ¼ cup water
- 3 Tbsp brown sugar
- 1 tsp ginger powder
- 3 Tbsp rice vinegar
- 2 tsp cornstarch
- 3 garlic cloves
- 2 cups cooked rice
- 1 green onion
- ½ tsp sesame seeds
Instructions
- Cut the pineapple in half lengthwise and scoop out the flesh, reserving the chunks.
- Season chicken pieces with salt and pepper, then sauté in oil over medium heat until browned.
- Combine soy sauce, water, brown sugar, rice vinegar, garlic, and reserved pineapple chunks in a bowl; pour over chicken.
- Simmer for 5–7 minutes until sauce thickens.
- Serve over cooked rice in pineapple boats and garnish as desired.
