- 1 medium onion
- 2 tsp olive oil
- Spices: cumin, oregano, smoked paprika, salt, and pepper
Instructions
- In a mixing bowl, combine chipotle peppers, lime juice, orange juice, cilantro, minced garlic, quartered onion, cumin, oregano, smoked paprika, salt, and pepper. Whisk until smooth.
- Marinate the chicken in the mixture for at least 30 minutes (or overnight for deeper flavor).
- Heat a cast iron skillet or grill pan over medium-high heat with olive oil.
- Remove the chicken from marinade (discard excess) and cook for about 6-7 minutes per side until it reaches an internal temperature of 165°F.
