Ingredients
- 1 cup strong brewed espresso or coffee (cooled)
- 24 ladyfingers
- 1 cup mascarpone cheese
- ½ cup unsweetened coconut cream
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup toasted coconut flakes (for garnish)
- 2 tbsp cocoa powder (for dusting)
Instructions
- Brew the espresso or coffee and let it cool. Stir in the sugar until dissolved.
- In a mixing bowl, combine mascarpone, coconut cream, sugar, and vanilla. Mix until smooth.
- Quickly dip each ladyfinger in the cooled coffee mixture; avoid soaking them too long.
- Layer soaked ladyfingers in a serving dish, followed by the mascarpone mixture. Repeat layers until ingredients are used up.
- Dust cocoa powder on top and sprinkle with toasted coconut flakes. Refrigerate overnight before serving.
