- 3 large carrots, peeled and ends trimmed
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon agave syrup or maple syrup
- 1/2 teaspoon ground coriander
- 1/8 teaspoon cayenne pepper, optional
- 1/4 teaspoon kosher salt
- 2 tablespoons chopped parsley
- 2 teaspoons sesame seeds
- 1 tablespoon chopped cilantro or mint, optional
Instructions
- Wash and peel the carrots. Using a box grater or food processor, shred them into long ribbons or finely grated pieces and place them in a mixing bowl.
- In a separate small bowl, whisk together the olive oil, lime juice, apple cider vinegar, agave syrup, ground coriander, cayenne pepper (if using), and kosher salt until combined.
- Pour the dressing over the shredded carrots and toss to coat evenly. Add chopped parsley and sesame seeds; mix gently.
- Allow the salad to sit for about 5 minutes before serving chilled or at room temperature.
