Instructions
- In a mixing bowl, whisk together the vegan mayo, Greek yogurt, apple cider vinegar, mustard, sugar, salt, and black pepper until smooth.
- Thinly slice the red cabbage using a knife or mandoline slicer to make about 5 cups. Grate the carrots.
- In a large mixing bowl, combine the sliced cabbage, grated carrots, and chopped parsley; toss to mix well.
- Add the dressing to the vegetable mixture and toss until evenly coated.
- Serve immediately for maximum crunch or refrigerate for up to 3 days for flavors to meld.
