  • 1 tbsp butter
  • 8 oz cremini mushrooms, sliced
  • 1/2 medium onion, chopped
  • 1 tbsp dijon mustard (or add to taste)
  • 2/3 cup chicken broth
  • 1/2 cup full-fat sour cream
  • 3 cloves garlic, minced

Instructions

  1. Season chicken breasts with garlic powder, salt, and black pepper; dredge lightly in flour.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat; sear the chicken until golden brown (5-7 minutes per side). Remove from skillet.
  3. In the same skillet, add an additional tablespoon of olive oil and butter; sauté mushrooms and onion until softened (4-5 minutes). Add minced garlic and cook until fragrant (1 minute).
  4. Stir in dijon mustard; pour in chicken broth while scraping up browned bits. Bring to a simmer.
  5. Stir in sour cream until well combined; return chicken to skillet and simmer for an additional 5 minutes.
