- 2 chicken breast halves
- 1/2 tsp garlic powder
- Salt and black pepper, as desired
- Flour, for coating
- 3 tbsp olive oil
- 1 tbsp butter
- 8 oz cremini mushrooms, sliced
- 1/2 medium onion, chopped
- 1 tbsp dijon mustard (or add to taste)
- 2/3 cup chicken broth
- 1/2 cup full-fat sour cream
- 3 cloves garlic, minced
Instructions
- Season chicken breasts with garlic powder, salt, and black pepper; dredge lightly in flour.
- Heat 2 tablespoons of olive oil in a skillet over medium heat; sear the chicken until golden brown (5-7 minutes per side). Remove from skillet.
- In the same skillet, add an additional tablespoon of olive oil and butter; sauté mushrooms and onion until softened (4-5 minutes). Add minced garlic and cook until fragrant (1 minute).
- Stir in dijon mustard; pour in chicken broth while scraping up browned bits. Bring to a simmer.
- Stir in sour cream until well combined; return chicken to skillet and simmer for an additional 5 minutes.
