- 2 large Sweet Potatoes
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Smoked Paprika
- 1 cup Feta Cheese
- 2 tablespoons Honey
- 2 tablespoons Fresh Parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, slicing them into uniform ½ inch rounds.
- In a mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and optionally smoked paprika.
- Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
- Roast for 25-30 minutes until tender and golden brown, flipping halfway through.
- Remove from the oven and top each round with crumbled feta cheese, drizzle with honey, and sprinkle with freshly chopped parsley before serving.
