- Grilled chicken (chicken breast or thighs)
- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1/2 cup diced green onion
- 3/4 cup freshly diced cilantro
- 1 cup shredded carrots
- 1 red bell pepper, thinly julienned
- 1 jalapeno, seeded and diced
- Sesame ginger dressing
- 1/3 cup toasted sliced almonds
- 1/3 cup roasted cashew halves
- Sesame seeds
Instructions
- Marinate your chicken using your favorite grilled sesame recipe.
- Prepare the sesame ginger dressing according to your preferred method.
- In a large bowl, combine shredded green cabbage, red cabbage, diced green onion, cilantro, shredded carrots, red bell pepper, and jalapeno.
- Toss the salad mixture with the dressing until well coated.
- Grill or bake the marinated chicken until fully cooked. Slice it and serve it atop or alongside the salad.
- Garnish with toasted almonds, roasted cashews, sesame seeds, extra cilantro, and jalapeno slices before serving.
