Ingredients
- 4 large russet potatoes
- 1 lb. ground beef
- ¾ cup sour cream
- 2 cups half and half
- 1 yellow onion
- 3 cloves garlic
- 1 ½ cups mixed frozen vegetables
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
Instructions
- Shred cheese and set aside.
- Cook ground beef in a stock pot until browned; drain and set aside.
- Boil diced potatoes until fork-tender, then mash with sour cream and butter.
- In the same pot, sauté onions and garlic until soft, add flour to thicken.
- Gradually stir in chicken broth and seasonings; bring to a boil.
- Mix in mashed potatoes and blend for creaminess if desired.
- Stir in cooked beef and frozen vegetables, heat through.
- Add shredded cheese until melted; serve hot.
