For the Meatballs:
1 lb ground beef or turkey
2 cups fresh spinach, sautéed and chopped
4 cloves garlic, minced
1 small onion, finely chopped (optional)
1 large egg
1 cup breadcrumbs

For Flavoring:
1/2 cup grated Parmesan cheese
8 oz low-moisture mozzarella, cut into small cubes
1 tbsp Italian seasoning
Salt, to taste
Pepper, to taste
1/2 tsp red pepper flakes
1 tbsp chopped parsley

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Heat a skillet over medium heat and sauté the spinach until wilted. Let cool, squeeze out excess moisture, and chop finely.
  • In a large bowl, combine ground meat, spinach, garlic, onion (if using), egg, breadcrumbs, Parmesan, Italian seasoning, salt, pepper, red pepper flakes, and parsley. Mix until just combined.
  • Scoop a portion of the meat mixture and flatten slightly in your hand. Place a cube of mozzarella in the center and wrap the meat around it, sealing well. Repeat with remaining mixture.
  • Arrange meatballs on the prepared baking sheet.
  • Bake for 18–22 minutes, or until cooked through and browned on the outside.
