  • 8 tbsp butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 1 cup mashed bananas (about 2 bananas)
  • ⅓ cup maple syrup
  • 2 tsp vanilla extract
  • 3 eggs
  • ¾ cup buttermilk

Instructions

  1. Preheat oven to 350°F (175°C). Grease a deep baking dish.
  2. In a mixing bowl, cream together butter, granulated sugar, brown sugar until light and fluffy. Mix in eggs, vanilla extract, buttermilk, maple syrup, and mashed bananas.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Pour batter into the prepared dish and bake for 45–55 minutes or until a toothpick comes out clean.
  6. While the cake bakes, prepare the toffee sauce by melting butter and brown sugar together; stir in heavy cream and vanilla.
  7. Once baked, poke holes in the cake and pour cooled toffee sauce over it. Let it soak for at least one hour before serving.
