  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100g light brown sugar
  • 100g unsalted butter, melted
  • 150ml milk
  • 1 large egg
  • 100g dark treacle or molasses
  • 2 ripe pears, peeled and diced
  • 100g golden syrup
  • 50g unsalted butter
  • 50g light brown sugar

Instructions

  1. Preheat your oven to 170°C (340°F) and grease an 8-inch cake tin lined with parchment paper.
  2. Sift together flour, ginger, baking soda, cinnamon, and salt in a mixing bowl.
  3. In another bowl, whisk melted butter, light brown sugar, milk, egg, and dark treacle until smooth.
  4. Gradually combine dry ingredients with wet ingredients without overmixing; gently fold in diced pears.
  5. Pour batter into the prepared tin and bake for 35–40 minutes until a skewer comes out clean.
  6. Prepare the glaze by heating golden syrup, butter, and brown sugar until smooth; pour over the warm cake after poking holes in it.
