- 1 Tbsp cornstarch
- 2 cups frozen sliced strawberries
- 2 Tbsp cold water
- 2 Tbsp brown sugar, packed
- 2 Tbsp granulated sugar
- 1 Tbsp lemon juice (fresh or bottled)
- 4 oz cream cheese, softened
- 1/2 cup icing sugar
- 1 cup plus 2 Tbsp heavy cream, chilled
- Fresh strawberries, sliced
- Icing sugar, sifted over
Instructions
- Prepare the strawberry filling by combining cornstarch with cold water, then simmering it with frozen strawberries, sugars, and lemon juice until thickened. Cool before using.
- For the cream mixture, beat softened cream cheese with icing sugar until smooth, then whip heavy cream until soft peaks form. Gently fold them together.
- Preheat the oven and roll out the croissant dough. Spoon strawberry filling and cream mixture onto each triangle before rolling them up.
- Bake according to package instructions until golden brown and allow to cool slightly before serving. Garnish with fresh strawberries and sift icing sugar on top.
