- 3 cups fresh strawberries (sliced)

Instructions
- Prepare the strawberries by washing, hulling, and slicing them in half.
- In a saucepan, combine the sliced strawberries with sugar, lemon juice, and optional lemon zest. Heat over medium until bubbling.
- Reduce heat to medium-low and simmer for 20 minutes, stirring occasionally.
- Create a slurry by mixing cornstarch with a small amount of water. Gradually add this to the strawberry mixture while stirring continuously until thickened.
- Remove from heat and allow to cool completely before using or storing.
