Ingredients
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 2 cups fresh strawberries (chopped)
- ¼ cup granulated sugar (for filling)
- 1 tbsp lemon juice
- 1 tbsp cornstarch mixed with 1 tbsp water
- 8 oz semi-sweet chocolate (chopped)
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing them.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, mix eggs, milk, oil, and vanilla until smooth. Gradually combine with dry ingredients and stir in boiling water until blended.
- Divide batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
- Cool cakes before adding strawberry filling made from cooked strawberries mixed with sugar, lemon juice, and cornstarch.
- Prepare chocolate ganache by melting semi-sweet chocolate with heavy cream until smooth.
- Assemble the cake by layering it with strawberry filling and topping it with ganache.
