  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round baking pans by greasing them.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, milk, oil, and vanilla until smooth. Gradually combine with dry ingredients and stir in boiling water until blended.
  4. Divide batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  5. Cool cakes before adding strawberry filling made from cooked strawberries mixed with sugar, lemon juice, and cornstarch.
  6. Prepare chocolate ganache by melting semi-sweet chocolate with heavy cream until smooth.
  7. Assemble the cake by layering it with strawberry filling and topping it with ganache.
