- 1/2 cup unsalted butter

- 1/2 teaspoon fine sea salt
- 1 cup unsalted butter (for frosting)
- 1/4 cup heavy cream (or whole milk)
- 2 teaspoons pure vanilla extract (for frosting)
- 1/8 teaspoon fine sea salt (for frosting)
- 4 cups confectioners’ sugar, sifted
- 12 Golden sandwich cookies (like Golden Oreos), cream filling removed
- 1 cup freeze-dried strawberries, lightly crushed
- 4 tablespoons unsalted butter, melted and cooled
Instructions
- Preheat oven to 350°F (175°C) and grease two round baking pans.
- In a mixing bowl, cream together softened butter and sugar until smooth. Add egg whites, whole egg, milk, gelatin powder, and vanilla; mix until well combined.
- In another bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet ingredients until just blended.
- Pour batter into prepared pans and bake for 25 minutes or until a toothpick comes out clean. Allow cooling completely.
- For frosting: Beat softened butter with heavy cream, vanilla extract, salt, and confectioners’ sugar until fluffy.
- Assemble the cake by layering frosting between cooled cake layers and covering the entire cake with frosting.
- Mix crushed cookies with freeze-dried strawberries; sprinkle over the top of the frosted cake.
