  • Total Time: 45 minutes
  • Yield: Approximately 24 servings 1x

Ingredients

Scale
  • 16 oz cream cheese
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare a mini muffin tin or an 8×8-inch pan lined with parchment paper.
  2. For the crust, combine crushed graham crackers or Oreos with melted butter, pressing the mixture into the bottom of the prepared pan.
  3. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in sour cream, vanilla extract, and strawberry puree until combined.
  4. Pour the cheesecake mixture over the crust and bake: about 20–25 minutes for mini muffin tins or 35–40 minutes for larger pans until set but slightly jiggly in the center.
  5. Allow cooling at room temperature before refrigerating for at least four hours.
  6. For the topping, mix crushed Oreos and freeze-dried strawberries with melted butter, then sprinkle over chilled cheesecake bites before serving.
