- 5 tablespoons butter (melted)
- 1½ cups graham cracker crumbs
- 3 tablespoons sugar
- 1 teaspoon almond extract
- 10 strawberries (sliced)
- 16 ounces cream cheese (softened)
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 teaspoons lemon juice (freshly squeezed)
- 1 cup cold whipping cream (chilled)
- 3 tablespoons strawberry vegan gelatin
- 8 ounces Cool Whip
Instructions
- Prepare the crust by mixing melted butter, graham cracker crumbs, sugar, and almond extract in a bowl. Press into the bottom of a 9×13 inch baking dish.
- Layer sliced strawberries evenly over the crust.
- In another bowl, blend softened cream cheese until smooth, then add powdered sugar, vanilla extract, and lemon juice. Mix well.
- Whip chilled whipping cream until soft peaks form and gently fold it into the cream cheese mixture.
- Spread the cream cheese filling evenly over the strawberry layer and refrigerate for at least 2 hours or until set.
- Before serving, top with Cool Whip and garnish with extra graham cracker crumbs if desired.
