  • 1 teaspoon almond extract
  • 10 strawberries (sliced)
  • 16 ounces cream cheese (softened)
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons lemon juice (freshly squeezed)
  • 1 cup cold whipping cream (chilled)
  • 3 tablespoons strawberry vegan gelatin
  • 8 ounces Cool Whip

Instructions

  1. Prepare the crust by mixing melted butter, graham cracker crumbs, sugar, and almond extract in a bowl. Press into the bottom of a 9×13 inch baking dish.
  2. Layer sliced strawberries evenly over the crust.
  3. In another bowl, blend softened cream cheese until smooth, then add powdered sugar, vanilla extract, and lemon juice. Mix well.
  4. Whip chilled whipping cream until soft peaks form and gently fold it into the cream cheese mixture.
  5. Spread the cream cheese filling evenly over the strawberry layer and refrigerate for at least 2 hours or until set.
  6. Before serving, top with Cool Whip and garnish with extra graham cracker crumbs if desired.
