- 6 cups fresh strawberries (cleaned, tops removed)
- 4 cups lemon juice (bottled or fresh)
- 6 cups granulated sugar
Instructions
- Prepare your workspace: Set up a water bath canner and warm pint jars in hot water while simmering lids.
- Puree strawberries in a food processor until liquified; transfer to a large stainless steel saucepan.
- Add lemon juice and sugar to the puree; stir well. Heat over medium until it reaches 190-200°F without boiling.
- Fill hot jars with the mixture, leaving 1/4 inch headspace. Secure lids and bands fingertip tight.
- Process jars in boiling water for 15 minutes, then cool undisturbed for 12-24 hours.
