  • 2 tablespoons granulated sugar (or honey)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar (packed)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Prepare the strawberry filling by cooking chopped strawberries, sugar (or honey), lemon juice, cornstarch, and vanilla in a saucepan until thickened.
  2. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan.
  3. Make the crumble mixture by combining oats, flour, brown sugar, baking powder, salt, and cinnamon in a bowl. Cut in cold butter until crumbly.
  4. Press two-thirds of the crumble into the pan as the base, add cooled strawberry filling, then sprinkle remaining crumble on top.
  5. Bake for 35-40 minutes until golden brown; cool completely before slicing.
