  • 1/4 teaspoon salt
  • 1 cup buttermilk (or regular milk)
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Butter or oil for cooking

Instructions

  1. Puree the fresh strawberries in a blender until smooth.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine buttermilk, egg, melted butter, vanilla extract, and strawberry puree until well mixed.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; lumps are okay.
  5. Heat a non-stick skillet over medium heat and add some butter or oil.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form (2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  7. Serve warm topped with additional fresh strawberries and maple syrup.
