- 1 pint fresh strawberries (for both the cake and glaze)
- 1 cup unsalted butter
- 3 cups granulated sugar
- 5 large eggs
- 3 cups all-purpose flour
- 1 cup buttermilk
- 1 tsp vanilla extract
- 2 cups powdered sugar (for the glaze)
- 1 tsp pure lemon juice
Instructions
- Preheat oven to 350°F (175°C) and grease your loaf pan.
- Wash and hull strawberries; puree some for the glaze.
- Cream together butter and sugar until light and fluffy.
- Add eggs, one at a time, mixing well after each addition.
- In another bowl, combine flour, salt, and baking soda; gradually add to the creamed mixture, alternating with buttermilk.
- Stir in vanilla extract and optional strawberry extract; pour batter into prepared pan.
- Bake for about 70 minutes or until a toothpick comes out clean.
- For the glaze, mix reserved strawberry puree with powdered sugar and lemon juice until smooth.
- Once cooled, drizzle or spread glaze over the cake.
