- 1 cup green olives, pitted and coarsely chopped
- 1 cup black olives, pitted and coarsely chopped
- 1/2 cup giardiniera, drained and coarsely chopped
- 1/4 cup roasted red peppers, chopped
- 1/4 cup capers, drained
- 1/2 cup celery, finely chopped
- 3 cloves garlic, minced
- 1/2 cup extra virgin olive oil
- 1/4 cup red apple vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Freshly ground black pepper, to taste
- 1 large round Italian sesame seed bread, about 10 inches in diameter
- 4 oz. thinly sliced turkey slices
- 4 oz. thinly sliced provolone cheese
- 4 oz. thinly sliced mozzarella cheese
Instructions
- Prepare the olive salad by mixing olives, giardiniera, roasted red peppers, capers, celery, garlic, olive oil, vinegar, oregano, and seasonings in a bowl.
- Slice sesame seed bread horizontally and spread half of the olive salad on the bottom half.
- Layer with turkey slices, provolone cheese, mozzarella cheese, and top with remaining olive salad.
- Replace the top half of the bread and refrigerate for at least one hour before serving for enhanced flavor.
