- 1/2 cup cocoa powder
Instructions
- In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until smooth.
- Dissolve espresso powder in hot water and add it to the mascarpone mixture; stir well.
- Fold in crushed graham crackers until evenly mixed.
- Chill the mixture for about 15 minutes in the refrigerator.
- Roll chilled mixture into small balls.
- Coat each truffle generously with cocoa powder.
- Place on a parchment-lined baking sheet and chill for an additional 10 minutes before serving.
