  • 1/4 cup oat flour
  • 1/4 tsp salt
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 1/2 cups almond flour, 1/4 cup oat flour, and 1/4 tsp salt. Stir in 1/3 cup melted coconut oil, 1/4 cup maple syrup, and 1 tsp vanilla extract until well mixed. Press this mixture into a greased 8×8 baking dish to form the base.
  3. In a pot, heat 1 cup of berries with 1 1/2 tbsp maple syrup and 1 tbsp water over low heat until softened. Mash the mixture, then stir in 1/2 tsp cornstarch and simmer until thickened. Chill in the fridge.
  4. For the crumble topping, mix together 1/2 cup oat flour, 1/4 cup oats, 2 tbsp almond flour, a pinch of salt, along with the remaining melted coconut oil (1/4 cup), maple syrup (1 tbsp), and vanilla extract (1/2 tsp) until combined.
  5. Spread the chilled berry mixture over the base layer in the baking dish. Sprinkle the crumble topping evenly over it.
  6. Bake for about 25 minutes or until golden brown. Allow to cool completely before slicing into squares.
