Ingredients
- 1 1/2 cup almond flour
- 1/4 cup oat flour
- 1/4 tsp salt
- 1/3 cup melted refined coconut oil
- 1/4 cup pure maple syrup
- 1 tsp vanilla extract
- 1 cup berries, fresh or frozen
- 1 1/2 tbsp pure maple syrup
- 1 tbsp water
- 1/2 tsp cornstarch
- 1/2 cup oat flour
- 1/4 cup oats
- 2 tbsp almond flour
- 1/4 cup melted refined coconut oil
- 1 tbsp pure maple syrup
- 1/2 tsp vanilla extract
- pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine 1 1/2 cups almond flour, 1/4 cup oat flour, and 1/4 tsp salt. Stir in 1/3 cup melted coconut oil, 1/4 cup maple syrup, and 1 tsp vanilla extract until well mixed. Press this mixture into a greased 8×8 baking dish to form the base.
- In a pot, heat 1 cup of berries with 1 1/2 tbsp maple syrup and 1 tbsp water over low heat until softened. Mash the mixture, then stir in 1/2 tsp cornstarch and simmer until thickened. Chill in the fridge.
- For the crumble topping, mix together 1/2 cup oat flour, 1/4 cup oats, 2 tbsp almond flour, a pinch of salt, along with the remaining melted coconut oil (1/4 cup), maple syrup (1 tbsp), and vanilla extract (1/2 tsp) until combined.
- Spread the chilled berry mixture over the base layer in the baking dish. Sprinkle the crumble topping evenly over it.
- Bake for about 25 minutes or until golden brown. Allow to cool completely before slicing into squares.
