  • 1/3 cup (65g) packed light brown sugar
  • 3 tablespoons (65g) maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup (105g) chopped pecans
  • 1 3/4 cups (220g) all-purpose plain flour
  • 1 cup (200g) granulated sugar
  • 2 1/4 teaspoons baking powder
  • 1/8 teaspoon salt (if using unsalted butter)
  • 3/4 cup (190g) dairy-free milk (room temperature)
  • 1/4 cup (55g) neutral flavored oil
  • 1/4 cup (55g) melted vegan butter (and cooled or extra oil)
  • 1 teaspoon apple cider vinegar (optional)
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a 20cm (8-inch) round cake pan by lining its bottom with parchment paper and greasing it.
  2. In a medium saucepan over low heat, melt the vegan butter. Stir in the brown sugar, maple syrup, cinnamon, and salt until well combined. Once mixed smoothly, remove from heat. Pour this mixture into your prepared cake pan and spread it evenly across the bottom. Sprinkle chopped pecans over the topping mixture.
  3. In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt. In another bowl, mix together dairy-free milk, oil, melted vegan butter, vinegar (if using), and vanilla extract. Gradually add this wet mixture to the dry ingredients while stirring gently until just combined; be careful not to over-mix.
  4. Pour the batter carefully over the pecan topping in your prepared pan. Spread it evenly with a spatula if needed. Bake in your preheated oven for about 50 minutes or until a toothpick inserted into the center comes out clean.
  5. Once baked, allow the cake to cool in its pan for about 10 minutes. Then carefully invert it onto a serving plate while it’s still warm to let those gooey pecans shine on top!
