Ingredients
- 20-24 Medjool dates
- 2/3 cup creamy peanut butter
- 1/2 cup dry roasted peanuts
- 9 ounces chocolate chips or chocolate bar
- 1 teaspoon coconut oil (optional)
- Coarse sea salt (optional)
Instructions
- Line a medium baking sheet with parchment paper. Slit each date (removing pits if necessary) and arrange them on the pan in a rectangular shape.
- Spread creamy peanut butter evenly over the dates and sprinkle dry roasted peanuts on top.
- In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals until smooth.
- Pour melted chocolate over the peanut butter layer and spread evenly. Optionally sprinkle coarse sea salt on top.
- Freeze for 60-90 minutes until firm.
- Remove from freezer, peel off parchment paper, cut into pieces, and serve.
