- 1 pound chicken breast, cubed

- 2 cans green chiles
- 1½ cups corn (canned or frozen)
- 2 cans great northern beans
- 3 cups chicken broth
- 1 teaspoon salt
- ½ teaspoon pepper
- 1½ teaspoon cumin
- ½ teaspoon oregano
- ½ teaspoon chili powder
- ½ cup heavy cream
Instructions
- Heat olive oil in a Dutch oven over medium heat until shimmering.
- Add cubed chicken and diced onion; sauté until chicken is no longer pink and onion is translucent.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add green chiles, corn, beans, chicken broth, salt, pepper, cumin, oregano, and chili powder; stir well.
- Cover and let simmer for about 20 minutes to allow flavors to meld.
- Remove from heat; stir in heavy cream gently.
- Serve hot with optional toppings like avocado slices or tortilla chips.
