Instructions

  1. Preheat the oven to 325°F (165°C) with the rack positioned in the lower middle.
  2. In a mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla, and almond extracts; continue beating until soft peaks form.
  3. Sift together cake flour, sugar, and salt multiple times to aerate.
  4. Gently fold one-third of the flour mixture into the egg whites; repeat until fully incorporated. Pour into an ungreased tube pan.
  5. Bake for about 40-45 minutes until golden brown.
  6. Invert immediately after baking to cool for at least two hours before removing from the pan.
  7. Slice the cooled cake horizontally; spread whipped cream and layer strawberries between slices and on top as desired.
