- 12 large egg whites (room temperature)
- 1 1/2 teaspoons cream of tartar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Whipped cream (for serving)
- Fresh strawberries, sliced (for serving)
Instructions
- Preheat the oven to 325°F (165°C) with the rack positioned in the lower middle.
- In a mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla, and almond extracts; continue beating until soft peaks form.
- Sift together cake flour, sugar, and salt multiple times to aerate.
- Gently fold one-third of the flour mixture into the egg whites; repeat until fully incorporated. Pour into an ungreased tube pan.
- Bake for about 40-45 minutes until golden brown.
- Invert immediately after baking to cool for at least two hours before removing from the pan.
- Slice the cooled cake horizontally; spread whipped cream and layer strawberries between slices and on top as desired.
