- 1/2 cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/4 cup (50g) brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 medium apple, peeled and finely diced
- 2 tbsp (25g) granulated sugar (for topping)
- 1 tsp ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in one egg and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg. Gradually add this dry mix to the wet ingredients.
- Fold in finely diced apple gently.
- Spread the batter into the prepared pan evenly.
- Mix granulated sugar and cinnamon for the topping; sprinkle over the batter.
- Bake for 25–30 minutes until golden brown; check doneness with a toothpick.
- Allow to cool completely before cutting into squares.
