- Salt and black pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, combine chickpeas, cherry tomatoes, red onion, minced garlic, oregano, black pepper, and salt.
- Drizzle olive oil over the mixture and toss gently until coated.
- Place the feta cheese in the center of the dish.
- Bake for 25-30 minutes until tomatoes burst and feta is golden.
- Let it rest for 1 minute before stirring everything together to create a creamy sauce.
- Serve garnished with fresh herbs.
